Cisoria expresses itself freely and without ties, looking backwards to build our future.
The name of the restaurant is inspired by “Arte Cisoria”, a 15th century book written by Enrique de Villena, heir to the Marquisate of Villena. It is considered to be the first gastronomic book written in Spanish. The book deals with the respectful preparation of meat and its cut, especially hunting. This is something which fits perfectly with our philosophy of respect for the product and the environment.
